Barley Ven Pongal!

hmmm... Just tried Ven Pongal with Pearled Barley that I got from whole foods...
it came to be a very good dish... except for an occasional chewy bite, there's no other difference between using barley instead of rice... i think i might have used 1 dal : 1.5 barley...i think boiling the barley till it kind of becomes brown liquid and till it becomes very soft helps... also i guess more dal the better ;-)

i think next time i going to try boiling it to a "too soft" ("kuzhayara") level and see how it goes...

if u r curious abt barley's nutrition read here:

1 cup of cooked barley has 6 gms of fiber while regular white rice will have like 1 gm and brown rice around 4 gms... and taste wise, i feel barley is less chewy than brown rice ?

Soaking the barley for 4-8 hrs speeds up the cooking and also softens it.
